 UPSIDE DOWN BLOOD ORANGE CAKE

 Ingredients 
  • 1 cup plain flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1 large egg
  • 1/2 cup orange juice
  • 1/2 cup olive oil
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 5 blood oranges peeled, sliced 2cm thick,
    seeds removed

Method

Preheat oven to 190 C.
In to a medium size bowl, sift flour, salt, baking powder and baking soda.
Mix the brown sugar and sugar in small bowl.
In a seperate bowl combine the egg, orange juice, olive oil and add 1/2 cup of the combined sugar.
Stir together the dry ingredients and wet ingredients.
In a prepared 20cm/8-inch cake pan, sprinkle the rest of the remaining 1/4 cup of combined sugar over the base of the pan. Then arrange the orange slices in bottom of the prepared pan.
Pour the batter over the oranges and place in the oven.
Bake in oven for 45 minutes until a wooden skewer inserted in the centre of cake comes out clean.
Allow cake to cool in pan for about 1 hour and then turn out of pan on to plate and dust with icing sugar and serve with natural yoghurt.

For Vegan Variation: Substitute egg for 1/4 cup of soy yogurt.
