Lemon Delicious Pudding

Ingredients

  • 2 tbls butter
  • ½ cup sugar
  • 1 lemon juice and grated rind
  • 1 cup milk
  • 2 eggs separated
  • 3 tbls self-raising flour

Method

  • Preheat oven to 180 degrees
  • Grease proof one pudding basin or 4 ramekin dishes
  • Beat butter and sugar until
  • Add lemon juice and grated rind, milk and egg yolks. Beat well and then fold in flour until combined.
  • Whisk egg whites until firm peaks form then fold into mixture.
  • Pour into dishes and place in baking tray.
  • Add hot water to baking tray until half way up side of dishes.
  • Bake for 45 minutes until golden on top.
  • Serve with cream and fresh berries.
