Leek Quiche
Ingredients
- 4 small leeks
- 45g butter
- 2 cloves garlic
- 125g feta
- 2/3 cup cream
- 3 eggs, lightly beaten
- Salt and pepper
Method
- Line a quiche dish with puff pastry.
- Trim ends of leeks, slice finely, wash and drain.
- Melt butter in pan, add leeks and crushed garlic. Cook about 5 mins until leeks tender.
- Add chopped feta, cream, and eggs. mix well, season with salt and pepper and pour into pastry lined quiche dish.
- Bake in moderate oven about 30 minutes or until golden brown.
