Leek Quiche

Ingredients

  • 4 small leeks
  • 45g butter
  • 2 cloves garlic
  • 125g feta
  • 2/3 cup cream
  • 3 eggs, lightly beaten
  • Salt and pepper

Method

  • Line a quiche dish with puff pastry.
  • Trim ends of leeks, slice finely, wash and drain.
  • Melt butter in pan, add leeks and crushed garlic. Cook about 5 mins until leeks tender.
  • Add chopped feta, cream, and eggs. mix well, season with salt and pepper and pour into pastry lined quiche dish.
  • Bake in moderate oven about 30 minutes or until golden brown.
