Gingerbread

   Ingredients 
  • 3 1/2 cups self-raising flour
  • 1 cup plain flour
  • 6 teaspoons ground ginger
  • 2 teaspoons of ground cinnamon
  • 2 teaspoons ground mixed spice
  • 1 cup firmly packed brown sugar
  • 185 gm butter chopped (soft)
  • 1/2 cup golden syrup
  • 2 eggs, lightly beaten
  • 1/4 cup pure icing sugar

Method

1. Preheat oven to 180°C.

2. Sift flours, ginger, cinnamon, mixed spices and sugars into bowl.

3. With an electric mixer, combine the dry ingredients and butter. Mix until mixture resembles breadcrumbs.

4. Whisk the golden syrup and eggs together in a jug. With the motor running, add egg mixture and process until dough just comes together.

5. Turn onto a lightly floured surface. Kneed gently until smooth. Allow dough to rest for about 30 minutes.

6. Cut into cookie shapes or shape as required.

7. Place on trays lined with baking paper and place in freezer for about 15 minutes.

8. Place in oven one tray at a time and bake for about 15 minutes or until firm. Allow to cool on the tray for about 5 minutes and then transfer onto a cooling rack.

TIP : Freezing the dough will stop the cookies from spreading on the tray and help them to keep their shape.
