Christmas Pudding
Ingredients (Makes 2 puddings)
- 1 cup brown sugar
- 1 cup butter
- 1 cup self-raising flour
- 1 cup white breadcrumbs
- 1 teaspoon allspice
- 2 kg mixed dried fruit
- 4 large eggs
- 1 ½ tablespoons of plum jam
- 1 teaspoon baking soda
- 1/3 cup boiling water
Method
Rub butter through brown sugar, then add all other dry ingredients. Mix well.
Beat eggs and add to dry ingredients with the jam, mix through. Add boiling water to baking soda and add to mixture, mix together until well combined.
Pack mixture into pudding tin (above will make 2 puddings) or wrap mixture in calico and place in an 18cm pudding basin. Put basin or pudding tin in large saucepan, add boiling water to saucepan to surround basin/tin, fill to ¾ the height of the basin/tin.
Boil for 4-5 hours, topping up water as needed.
Allow to stand for 15 minutes, then tip out and serve with cream or custard.
