| CHOCOLATE TRUFFLES |

Ingredients |

- 125 g bitter chocolate
- 125 g unsalted butter
- 125 g icing sugar
- 2 tsp instant coffee (optional)
- 2 tsp Kahlua (optional)
For Coating Truffles
- 1 tsp tasteless oil
- 150 g chocolate (melted)
- cocoa for coating

Method
1. Melt chocolate in a double boiler or you can use bowl over a pan of boiling water. Leave to cool.
2. Beat the butter with the sugar until light and fluffy.
3. Combine chocolate with butter and sugar mix and either the coffee or the Liqueur (if required).
4. Allow the mixture to cool in the fridge for about half an hour or until hardens enough to be rolled into balls or small log shapes.
5. Either roll these in cocoa, or melt the chocolate with the oil (quantities as above) and coat each truffle in chocolate.
6. Leave on foil to set.
